What We Do:
The Processing Kitchen is the youngest branch of the Urban Canopy. The aim of this commercial kitchen project is to create a menu of value-added products that focus on using surplus food that might otherwise go to waste. We work with a range of Midwest farms and local distributors to source produce that can be turned into a range of pantry staples as well as unique, creative products. From pickles and preserves to a range of ferments to an array of frozen items, our commercial kitchen aims to create accessible and sustainable handmade goods with minimal processing.
Our Kitchen:
Our commercial kitchen space is located in The Hatchery, a licensed shared kitchen space and incubator in the Garfield Park neighborhood on the West Side of Chicago. Our private kitchen space allows us dedicated workspace to develop and produce a wide-range of products with ample capacity for growth and experimentation. Working at The Hatchery allows us to be surrounded by a community of food-focused small businesses focused on growing a better Chicago food system.
Where to Find Our Stuff:
Currently our items are available to our LUCSA members as additions to their weekly farm boxes and can also be found at our Urban Canopy booths at farmer’s markets throughout Chicago. We are looking to expand our wholesale operation to work with retail locations and stores. We are also always looking to expand our partnerships with local farmers, restaurants and food vendors who are looking for a co-packing operation to create retail or foodservice products.
